The Kiosko Universal, located in the heart of La Boqueria Market in Barcelona, is considered a symbol of gastronomic resistance. The Domínguez family, with Borja Domínguez as captain, has been running this establishment since 1973, consolidating 53 years of history in an environment increasingly affected by mass tourism.
“"The market is destroyed. I am not going to start selling empanadas."
Loyalty to the family heritage is reflected in the transparency and stability of the menu. Fixed dishes such as sautéed mushrooms, baby squid, cod 'a la llauna', and 'capipota' (using offal from Menuts Rosa) coexist with recent additions like eggs with garlic prawns. Wine, traditionally secondary, is limited to a basic selection.
Borja Domínguez, who initially hesitated to continue the family business, ultimately decided that his heart won over his head, ensuring the establishment's continuity. In addition to the cuisine, the venue features artistic interventions by the artist Antoni Miralda, including a disco ball from which cutlery emerges, installed in 2012.
