The emblematic Bar Coyote, a key meeting point in Sort and the Pallars Sobirà region, reaches its 80th year of existence on June 6th. Its history, full of sacrifices, began with Enric and Maria, the original founders who named the establishment Bar Esport.
According to local legend, Enric, an avid reader of novels about the legendary Coyote, decided to rename the bar to reflect his identity. In the late 1960s, Rafael and later José, parents of the current owner, took over the business, moving from Las Alpujarras in search of a future in Catalonia.
José and Encarna's family experienced years of great dedication, never closing the bar or taking holidays, while their children studied at university. Later, Ana Maria, daughter of the original founders, offered José and Encarna the opportunity to buy the premises, an agreement that allowed the current owner's parents to take out loans to renovate the bar and the apartment above.
Today, Bar Coyote is known for dishes such as squid, tripe, cod, anchovies, sandwiches, and bravas, serving as a regular meeting place for farmers on market and fair days, and a spot for vermouth on Sundays and holidays.
Currently, José and Encarna's two eldest children have been running the business since the late 1990s, adapting it to modern tastes while maintaining the culture of hard work and prioritizing customers, keeping alive the history of this emblematic establishment in Pallars Sobirà.
