This unique product is the result of years of observation in the Mas Fonoll vineyards. The wine is mainly made from the chardonnay variety, taking advantage of the autumn weather conditions in Baix Ebre, where mists allow for the development of noble rot.
The production process is notably slow. Fermentation lasts for three months due to the high natural sugar concentration, followed by three years of aging in French oak barrels. This artisanal method ensures an aromatic complexity reminiscent of apricot, orange marmalade, and mango.
Presented in a 37.5 cl format, Caligo is defined as an intimate and exclusive experience. With a price of 18.95 euros, the winery focuses on quality and patience, offering a dense and unctuous wine that reflects the local landscape.
