Verges prepares 2,100 liters of ancestral soup to mark the end of Carnival

The Soup Association will light thirty cauldrons in the town square to serve up to 5,000 portions.

The Sopa de Verges Association is finalizing preparations for its major annual event in Baix Empordà, where they plan to cook over 2,000 liters of traditional stew this February.

The festival, documented since the 14th century, involves the entire municipality of Verges in a ritual that starts with collecting firewood and ingredients from local houses. Tomorrow at 6:00 AM, fires will be lit in the square to boil 30 cauldrons.

The recipe remains unchanged, featuring celery, chickpeas, beans, and various meats including chicken, beef, pork, and lamb. Attendees are asked to bring their own plates to enjoy the 5,000 portions available.
